Red -A red guajillo chile & tomatoes based sauce, usually for shredded beef or cheese enchiladas.
Green -A mild green tomatillo sauce, used on shredded chicken, shredded pork or cheese enchiladas; topped with roasted poblano rajas & corn salsa.
Poblana -or mole sauce. A sweet and savory mix of chocolate, Mexican spices, nuts and chile peppers based sauce, goes with shredded chicken, cheese and beans enchiladas; topped with crumbled queso fresco, onions & sesame seeds.
Tomato -A tomato and onion based sauce spiced up with lite jalapeños, typically used on vegetarian cheese or Mexican queso fresco enchiladas.
